Butter in sticks, cups and grams
American butter is sold in 1 lb (454 g) boxes of four sticks. Each stick is 113 g and the wrapper is printed with tablespoon lines, so for most recipes you don’t need a measuring cup at all.
| US sticks | Cups | Tablespoons | Grams |
|---|---|---|---|
| ¼ stick | 2 tbsp | 2 | 28 g |
| ½ stick | ¼ cup | 4 | 57 g |
| 1 stick | ½ cup | 8 | 113 g |
| 1 ½ sticks | ¾ cup | 12 | 170 g |
| 2 sticks | 1 cup | 16 | 227 g |
| 4 sticks (1 lb) | 2 cups | 32 | 454 g |
The butter converter converts between all four units for any amount.
Measuring butter without a scale
- Use the wrapper. Each line on a US stick is 1 tablespoon (14 g). Cut at the line you need.
- Use the water method for odd amounts. Fill a liquid measuring cup with 1 cup of cold water, add butter until the water rises by the amount you need, then drain the water.
- Pack a measuring cup. Press softened butter firmly into a dry measuring cup to push out air pockets, then level it. Cold butter leaves gaps, so you’ll get less than you think.
UK, European and Australian butter
Outside the US, butter is usually sold in 250 g blocks (sometimes 200 g or 500 g) and recipes give weights rather than sticks. A 250 g block is about 1 cup + 1 ½ tablespoons, or 2 ¼ US sticks. Many British recipes round one American stick to 115 g, which is close enough to swap one-for-one.
Salted or unsalted?
They weigh the same per cup. Most baking recipes use unsalted butter so you control the salt. If you only have salted butter, you can usually use it and reduce added salt by about ¼ teaspoon per stick.
